It depends on which dish youre using and how you make it. I used to make my salmon in a big pot on the stovetop, but now I use an electric fish cooker. I also use an electric skillet. I found that if you fry the fish in olive oil until its crispy on both sides, you get a crispy edge and a creamy interior. Olive oil is a little less crisp than butter.

I think I can also use a pan that uses a charcoal grill. I love when my salmon is on the grill, and I can just throw it on the grill and turn my head, all while smoking, and it smells like heaven.
